Is Meal Prep Boring To You?
Meal prepping doesn't have to be boring or unexciting. In fact, it can be a delightful adventure! It certainly doesn’t have to be the traditional chicken, rice, and broccoli combo that so many people dread.
My work week starts on Saturdays, which means my Fridays double as my Sundays, so I dedicate a good chunk of my Fridays to resetting and preparing for the busy week ahead. On the list of tasty meal prep for this week, I've got a mouthwatering Ground Beef Bulgogi. This dish is not only ridiculously easy to prepare, but it's also a quick and satisfying meal option that you'll love.

Now, you may be wondering how you can adjust it to fit your personal dietary needs?
Well, that’s entirely up to your specific macros and preferences. If you’re able to whip it up exactly as written, that’s fantastic!
But if you need to substitute in some stevia for the sugar, opt for leaner ground beef, or use cauliflower rice, etc., then go right ahead—that’s perfectly fine too! Get ready to enjoy some delicious flexibility in your meal prepping!

Easy and quick weeknight menu, perfect with any vegetable side dish you choose to make but no side needed! All you need is a hint of chili sauce for a kick!
INGREDIENTS
10 cloves garlic, chopped
1 medium size onion, small diced
4 tbsp soy sauce
2 tbsp mirin
2 tbsp sugar
1 tbsp plum extract(you can substitute to apricot jam)
1/2 tsp black pepper
1 tbsp cooking oil
3 to 5 green onions, chopped
1 tsp sesame seeds
1 tsp sesame oil
INSTRUCTIONS
Combine beef, garlic, onion, soy sauce, mirin, sugar, plum extract and black pepper in a large mixing bowl. You could marinate for 30 minutes but it’s not necessary because we are using ground beef.
Heat a wok or large skillet over high heat, add cooking oil and swirl to coat. Add the ground beef mixture, stir fry and break down the meat into little pieces. Keep cooking until there’s no moisture and everything is fulled cooked, about 8 to 10 minutes. Stir occasionally.
When you hear the sizzling and all the moisture from the beef is gone, toss in chopped green onions. Turn off the heat. Add sesame seeds and oil, toss one last time.
Serve on top of warm cooked rice, cauliflower rice, quinoa or any starch of your choice. Garnish with some sesame seeds and green onion if you’d like to. Enjoy!
**I used Apricot Jam. If you can find the sugar free version that will help drop the carbs. It’s a sweet savory recipe.
Cheeseburger Spring Rolls

I’m excited to say I get to go to Disney this year! And in honor of that I’ve found this Disney recipie and made it macro-friendly.
Adventureland Cheeseburger Spring Rolls
1 lb 90% lean ground beef, browned
1/2 of a medium Onion chopped
1 tsp minced garlic
1 tsp salt
1 tsp black pepper
1 tbsp No Sugar Added Ketchup
1 tbsp Mustard
10 tbsp Mild Cheddar (Fat-free, reduced fat this will change the macros slightly)
10 Egg Roll Wrappers
Cook the beef and onions together with the garlic, salt and pepper. Let the mixture cool for about 10 minutes when it’s done, then stir in cheese, mustard, and ketchup. I added some dill pickle relish just because I like pickles.
When I made these I wound up with 9, but I did about 50 grams per egg roll wrapper. Roll them up, and seal the edges with water, just like a normal egg roll. I air fried mine at 350 degrees for about 10 minutes, flipping around the halfway mark.
Two of these rolls are pretty filling, but realistically you can eat as many as you’d like.
The macros PER egg roll for 9 are as follows:
Protein: 14
Carbs: 12.5 (we’ll call it 13)
Fats: 5.6 (This was for a mix of Cabot Lite Cheddar, and Fat-free Cheddar. It will differ depending on brand and type of cheese)
